22. Two-Dimensional Correlation Infrared Spectroscopy for Rapid Analysis of the Effect of pH on the Secondary Structure Content of Soybean Protein Isolate

Abstract

To meet the different functional needs for soybean protein isolate (SPI) in different food applications, this study utilized infrared spectroscopy to rapidly analyze 70 SPI samples subjected to different pH treatments, and explored the effect of pH changes on the secondary structure content of SPI. Mean centralization (MC), multivariate scattering correction (MSC), standard normal variate transformation, and normalization were used for infrared data preprocessing. Feature wavebands were identified based on two-dimensional correlation infrared spectra, and predictive modeling of the secondary structure content of SPI against pH was performed using partial least squares (PLS) and arithmetic optimization algorithm-random forests (AOA-RF). The results showed that the relative standard deviations of the α-helix, β-sheet, β-turn, and random coil prediction models developed by the combined use of MC and MSC were 1.29%, 1.60%, 1.37%, and 7.28%, respectively, indicating their combination to be the best spectral pre-processing method. The optimal model for predicting α-helix and β-sheet contents was AOA-RF (characteristic wavebands), with calibration determination coefficients of 0.935 0 and 0.926 6 and prediction determination coefficients of 0.856 8 and 0.870 1, respectively. The optimal model for predicting β-turn and random coil contents was PLS (characteristic wavebands), with calibration determination coefficients of 0.915 4 and 0.881 7 and prediction determination coefficients of 0.891 3 and 0.784 3, respectively. The results of this study provide a theoretical basis for product quality detection and processing condition control in industrial settings.

Abstract

Objective To compare the efficacy of olopatadine hydrochloride and desloratadine citrate disodium for the treatment of chronic urticaria. Methods A total of 184 patients with chronic urticaria were enrolled at the department of dermatology of Kaifeng People's Hospital from October 2020 to January 2024, and were randomly assigned into the study group (92 cases, olopatadine hydrochloride) and the controls (92 cases, desloratadine citrate disodium). Following one-month treatment, the clinical effective rate, symptom score, dermatology life quality index (DLQI) score and urticaria control test (UCT) score before and after the treatment, and adverse reactions were evaluated in both groups. Results After 1-month treatment, the total clinical effective rates were significantly higher in the study group than in the controls (95.65% vs. 86.96%, χ2=4.38, P=0.036). 24. Developing a Design Thinking Engagement Scale for Early Childhood Teachers

Abstract

Engaging in design thinking activities has been increasingly viewed as important for the craft of teaching for early childhood practitioners. However, reliable and valid measurements for this are lacking. As such, this research aims to develop and validate a design thinking engagement scale (DTES) to assess teachers' engagement in design thinking. A sample of 370 Chinese kindergarten teachers completed a questionnaire to test its reliability, validity and generality empirically. First, principal component analysis (PCA) and confirmatory factor analysis (CFA) both supported a five-factor structure of the DTES, indicating satisfactory construct validity. The total variance explained in PCA was 85.48%. Second, the reliability analyses within each sub-dimension and for the total DTES also showed an adequate internal consistency for the scale, ranging from 0.89 to 0.92 in PCA, and 0.84 to 0.94 in CFA. Besides, at CFA, the composite reliability ([rho]) (0.84 to 0.94) also indicated a good reliability. Moreover, both good convergent validity and discriminant validity were obtained through the method of average variance extracted (AVE) for each dimension (0.64 to 0.80) and constraining the correlations between each pair of constructs respectively. Thus, the DTES can be a promising tool for measuring design thinking engagement among early childhood teachers.

Abstract

We present a theoretical investigation of thermoelectric transport properties of bismuth-based ternary chalcogenides Pt3Bi4X9 (X = S, Se), which has low thermal conductivity and promising zT as discovered in a recent experiment [Wang et al., J. Am. Chem. Soc. 146, 7352 (2024)], using density functional theory combined with the Boltzmann transport equation within rigid band approximation. We find that the high density of states of valence bands near the Fermi level yields high p-type Seebeck coefficient. The lower effective mass of electron in Pt3Bi4S9 leads to high mobility and long relaxation time, and hence the high n-type electrical conductivity. In contrast, the effective mass of electron is much higher than that of hole in Pt3Bi4Se9 due to the flatted conduction band, which in turn gives rise to higher p-type electrical conductivity. As a result, the p-type zT is much higher than n-type in Pt3Bi4Se9, with an optimal value of 0.5 at 300 K. Considering the experimental carrier concentration for Pt3Bi4S9 (−1.4 × 1019 cm−3) and Pt3Bi4Se9 (−0.898 × 1019 cm−3), calculated n-type zT at 773 K are 0.52 and 0.04, respectively, which are consistent well with the experimental values. Our calculations uncover the upper limit thermoelectric zT of Pt3Bi4X9 and also highlight them as promising thermoelectric materials. [ABSTRACT FROM AUTHOR]
