Beef flavor plays a crucial role in consumer preference, yet research on this trait has been limited by past technological constraints. Intramuscular fat (IMF) is a key determinant of beef quality, influencing taste, marbling, and overall flavor. Xinjiang brown cattle (XBC), an indigenous breed from northern Xinjiang, China, presents significant variation in meat quality, with IMF content ranging from 0.2 % to 4.3 % within the population. This variation suggests strong potential for breeding improvement. In this study, we selected 82 XBC for slaughter and meat quality analysis, categorizing them based on IMF content. Using two-dimensional gas chromatography–time-of-flight mass spectrometry (GC×GC-TOF MS), we analyzed volatile flavor compounds across different beef cuts (Longissimus dorsi, Semitendinosus, Supraspinatus). Our results showed that beef with higher IMF levels exhibited enhanced flavor profiles, characterized by sweet, green, fruity, and waxy notes, while castrated bulls displayed the weakest flavor intensity. Metabolomic analysis further revealed significant differences in flavor substances between high and low IMF content beef. RNA-Seq analysis identified key genes (AQP4, FZD2, FADS1, BPG1, CEBPD, FABP4) associated with flavor formation, offering valuable insights for breeding strategies aimed at improving XBC meat quality. This comprehensive study provides a robust theoretical foundation for advancing the genetic improvement of XBC.

Abstract It is important to study the bacteria that cause endometritis to identify effective therapeutic drugs for dairy cows. In this study, 20% oxytetracycline was used to treat Holstein cows (n = 6) with severe endometritis. Additional 10 Holstein cows (5 for healthy cows, 5 for cows with mild endometritis) were also selected. At the same time, changes in bacterial communities were monitored by high-throughput sequencing. The results show that Escherichia coli, Staphylococcus aureus and other common pathogenic bacteria could be detected by traditional methods in cows both with and without endometritis. However, 16S sequencing results show that changes in the abundance of these bacteria were not significant. Endometritis is often caused by mixed infections in the uterus. Oxytetracycline did not completely remove existing bacteria. However, oxytetracycline could effectively inhibit endometritis and had a significant inhibitory effect on the genera Bacteroides, Trueperella, Peptoniphilus, Parvimonas, Porphyromonas, and Fusobacterium but had no significant inhibitory effect on the bacterial genera Marinospirillum, Erysipelothrix, and Enteractinococcus. During oxytetracycline treatment, the cell motility, endocrine system, exogenous system, glycan biosynthesis and metabolism, lipid metabolism, metabolism of terpenoids, polyketides, cofactors and vitamins, signal transduction, and transport and catabolism pathways were affected.

Introduction: Xinjiang Brown cattle are a famous dual-purpose (dairy-beef) cultivated breed in China that occupy a pivotal position within the cattle breeding industry in Xinjiang, China. However, little information is available on the genetic background of this breed. To fill this research gap, we conducted a whole-genome screen using specific-locus amplified fragment sequencing to examine the genetic structure and diversity of 130 Xinjiang Brown cattle-grazing type (XBG, traditional type) cattle.Methods: A subsequent joint analysis incorporating two ancestral breeds, specifically 19 Brown Swiss (BS) foreign and nine Kazakh (KZ) Chinese cattle, as well as 20 Xinjiang Brown cattle-housing type (XBH) cattle, was used to explore the genetic background of the Xinjiang Brown cattle.Results: The results showed that, after nearly a century of crossbreeding, XBG cattle formed a single population with a stable genetic performance. The genetic structure, genetic diversity, and selection signature analysis of the two ancestral types showed highly different results compared to that of XBH cattle. Local ancestry inference showed that the average proportions of XGB cattle within the BS and KZ cattle lineages were 37.22% and 62.78%, respectively, whereas the average proportions of XBH cattle within the BS and KZ cattle lineages were 95.14% and 4.86%, respectively. Thus, XGB cattle are more representative of all Xinjiang Brown cattle, in line with their breeding history, which involves crossbreeding. Two complementary approaches, fixation index and mean nucleotide diversity, were used to detect selection signals in the four aforementioned cattle breeds. Finally, the analysis of 26 candidate genes in Xinjiang Brown cattle revealed significant enrichment in 19 Gene Ontology terms, and seven candidate genes were enriched in three pathways related to disease resistance (CDH4, SIRPB1, and SIRPα) and the endocrine system (ADCY5, ABCC8, KCNJ11, and KCNMA1). Finally, development of the core SNPs in XBG cattle yielded 8,379 loci.Conclusion: The results of this study detail the evolutionary process of crossbreeding in Xinjiang Brown cattle and provide guidance for selecting and breeding new strains of this species.

Tenderness and meat color are the two most important factors affecting consumers to buy beef, but also directly affect the quality of beef. In order to improve the quality of meat tenderness and meat color, many methods have been developed. Calcium salt rejuvenation method is regarded as an economical and efficient method, in the appropriate amount of addition, it can significantly improve the meat color. However, there is still relatively little research on the mechanism and application of different calcium salts in regulating beef quality improvement, which hinders the further development of calcium salt tenderization method. Therefore, this paper reviews the way of calcium salt addition, the improvement factors of beef quality regulation and the application of calcium salt in beef, in order to provide reference significance for the further development of calcium salt in the field of meat products.

My country is both a big country of livestock breeding and a big fishery country, and it has abundant resources such as animal bones, animal skins and fish bones, fish skins and fish scales. Collagen peptides are derived products obtained by enzymatic or thermal hydrolysis of collagen. Because of its good biocompatibility, degradability, plasticity, thermal stability, flexibility, absorbency, solubility, water retention, anti-oxidation, weak antigenicity and other advantages, it is widely used in food, medical, and skin care, feed and other industries. In this paper, the raw material sources, extraction methods and applications of collagen peptides are reviewed. At the same time, feasible solutions are proposed for the problems existing in the production and manufacturing of collagen peptides, and the research direction of collagen peptides in the future is also predicted in order to provide reference for the further development of collagen peptides.

ABSTRACT The objective of this trial was to investigate the potential benefits of enzyme and probiotic supplementation on the growth performance, nutrient digestibility, carcass traits, and meat quality of Simmental cattle. Sixty Simmental steers (367.75±4.69 kg) were randomly divided into three groups: control (fed basal diet), BC1 group (fed basal diet and 10 g/d brewer’s yeast and cellulase supplementation per cattle), and BC2 group (fed basal diet and 20 g/d brewer’s yeast and cellulase supplementation per cattle). A 10-d preparation period was followed by a 120-d experimental period. The results showed that the final weight of the BC2 group was greater than that of the control group. Also, feed conversion ratio of the BC2 group was better than that of the control group. Net meat weight increased by 3.86% in the BC2 group compared with the control group. The apparent digestibility of neutral detergent fiber, acid detergent fiber, and crude protein of the BC2 group was greater than that of the control group. Dietary supplementation with brewer’s yeast and cellulase supplementation could improve the growth performance and nutrient digestibility of Simmental cattle.

Objective With the rapid development of proteomics sequencing and RNA sequencing technology, multi-omics analysis has become a current research hotspot. Our previous study indicated that Xinjiang brown cattle have better meat quality than Kazakh cattle. In this study, Xinjiang brown cattle and Kazakh cattle were used as the research objects. Methods Proteome sequencing and RNA sequencing technology were used to analyze the proteome and transcriptome of the longissimus dorsi muscle of the two breeds of adult steers (n = 3). Results In this project, 22,677 transcripts and 1,874 proteins were identified through quantitative analysis of the transcriptome and proteome. By comparing the identified transcriptome and proteome, we found that 1,737 genes were identified at both the transcriptome and proteome levels. The results of the study revealed 12 differentially expressed genes and proteins: troponin I1, crystallin alpha B, cysteine, and glycine rich protein 3, phosphotriesterase-related, myosin-binding protein H, glutathione s-transferase mu 3, myosin light chain 3, nidogen 2, dihydropyrimidinase like 2, glutamate-oxaloacetic transaminase 1, receptor accessory protein 5, and aspartoacylase. We performed functional enrichment of these differentially expressed genes and proteins. The Kyoto encyclopedia of genes and genomes results showed that these differentially expressed genes and proteins are enriched in the fatty acid degradation and histidine metabolism signaling pathways. We performed parallel reaction monitoring (PRM) verification of the differentially expressed proteins, and the PRM results were consistent with the sequencing results. Conclusion Our study provided and identified the differentially expressed genes and proteins. In addition, identifying functional genes and proteins with important breeding value will provide genetic resources and technical support for the breeding and industrialization of new genetically modified beef cattle breeds.

Wind speed affects aviation performance, clean energy production, and other applications. By accurately predicting wind speed, operational delays and accidents can be avoided, while the efficiency of wind energy production can also be increased. This paper initially overviews the definition, characteristics, sensors capable of measuring the feature, and the relationship between this feature and wind speed for all Quality Indicators (QIs). Subsequently, the feature importance of each QI relevant to wind-speed prediction is assessed, and all QIs are employed to predict horizontal wind speed. In addition, we conduct a comparison between the performance of traditional point-wise machine learning models and temporally correlated deep learning ones. The results demonstrate that the Bidirectional Long Short-Term Memory (BiLSTM) neural network yielded the highest level of accuracy across three metrics. Additionally, the newly proposed set of QIs outperformed the previously utilised QIs to a significant degree.

The principle of system resilience is its ability to withstand disruptions and maintain an equilibrium state. In urban network systems, adaptive traffic signal control (ATSC) has been an effective countermeasure to mitigate traffic flow disturbance and improve resilience. This research has explored the usage of a decentralised advantage actor-critic (a2c) algorithm-based ATSC in mitigating disruptions, particularly nonrecurring congestion caused by car accidents. A reward function has also been proposed, combining deduced resilience metric, safety indicator time to collision (TTC) and system performance. A virtual simulation environment was created using simulation of urban mobility (SUMO) to facilitate the evaluation of the proposed approach. In the grid simulation environment, an overall 5.8% improvement is achieved, exceeding benchmark algorithms in three metrics, especially performance with a margin of over 5.2%. Robustness against different levels of car accidents are proven as well. Further evaluation is also implemented based on a real-world case study and demonstrates an improvement of 20.08%, highlighting the correlation of proposed method’s efficiency on the traffic flow rate and road structure.

Cellular receptor-mediated signaling pathways play critical roles during the initial immune response to Human Cytomegalovirus (HCMV) infection. However, the involvement of type-I transmembrane glycoprotein CD147/EMMPRIN (extracellular matrix metalloproteinase inducer) in the antiviral response to HCMV infection is still unknown. Here, we demonstrated the specific knockdown of CD147 significantly decreased HCMV-induced activation of NF-κB and Interferon-beta (IFN-β), which contribute to the cellular antiviral responses. Next, we confirmed that HCMV-encoded miR-US25-1-5p could target the 3′ UTR (Untranslated Region) of CD147 mRNA, and thus facilitate HCMV lytic propagation at a low multiplicity of infection (MOI). The expression and secretion of Cyclophilin A (sCyPA), as a ligand for CD147 and a proinflammatory cytokine, were up-regulated in response to HCMV stimuli. Finally, we confirmed that CD147 mediated HCMV-triggered antiviral signaling via the sCyPA-CD147-ERK (extracellular regulated protein kinases)/NF-κB axis signaling pathway. These findings reveal an important HCMV mechanism for evading antiviral innate immunity through its encoded microRNA by targeting transmembrane glycoprotein CD147, and a potential cause of HCMV inflammatory disorders due to the secretion of proinflammatory cytokine CyPA.
