Abstract

As an important nutrient in milk, fat exists in the form of milk fat globules. Cow’s milk is an important substitute for breast milk, but the difference between its milk fat globules and those of human milk remains to be clarified. In this paper, the main differences in protein composition, lipid composition, structure and function between cow’s and human milk fat globules are reviewed. The types of milk fat globule membrane proteins (MFGMPs) in human milk are significantly more than those in cow’s milk, and there are also obvious differences in the abundance of some special proteins. The composition and distribution of unsaturated and saturated fatty acids in cow’s milk and human milk are also different. Sphingomyelin is more abundant in human milk phospholipids, but in cow’s milk, lecithin is the main phospholipid. In all mammalian milk, the core of the lipid structure is triglyceride, encapsulated by a complex three-layer membrane. In terms of composition and structure, there is heterogeneity in milk fat globule membrane (MFGM) between the same species and different species. By summarizing the differences between human milk and cow’s milk fat globules, this review aims to increase the utilization rate and value of milk MFGM, to improve the structure of simulated milk fat globules, and to further optimize infant formula.

Abstract

A facile solution method for the form-controlled synthesis of CsMgPO4·6H2O is reported in this work and the key factor was determined to be the pH value of the solution used. A pure hexagonal phase (P63mc) was obtained at a pH range of 6.9–8.0, whereas a cubic phase (F4¯3m) was obtained at 9.5–11.3. Compared with the cubic phase, the hexagonal phase of CsMgPO4·6H2O possessed a stronger second harmonic generation response of 0.82 pm V−1 due to the distortion of the PO4 motif from a regular tetrahedron. The form-controlled synthesis mechanism was identified with the aid of infrared spectroscopy: the protonation process reduced the symmetry of the PO4 motif when the solution pH decreased, resulting in the crystallization of the hexagonal phase of CsMgPO4·6H2O with the distorted PO4 tetrahedron at a lower pH range. 38. Electrochemical Water Splitting by Mo-Based Metal–Organic Framework-Derived MoO2/NC/Pt Nanostructures in a Wide pH Range.

Abstract

High-efficiency electrocatalytic hydrogen evolution reaction (HER) is among the promising approaches for future low-cost hydrogen production. The cost and effectiveness challenges of electrocatalysts have significantly limited the development of electrochemical HER. Metal–organic framework (MOF) derivatives with tunable conformations and remarkable activity have shown unique capabilities in electrocatalytic hydrogen precipitation. Herein, we report a simple method for the synthesis of MOF-derived MoO2/NC with decorated Pt nanostructures. Thus, the synthesized MoO2/NC/Pt-20 nanostructures with a rod-like structure exhibit better pH-universal HER performance with overpotentials of 32, 53, and 70 mV in alkaline, acidic, and neutral conditions (10 mA·cm–2), respectively. Also, the electrocatalysts show low cell voltages of 1.58, 1.59, and 1.70 V at 10 mA·cm–2 for overall water splitting in alkaline, acidic, and neutral conditions, respectively. This research has opened further thought for the rationale for the design of electrocatalysts with stable HER and overall water-splitting performance at all-pH values. [ABSTRACT FROM AUTHOR]
