The study was aimed to evaluate the physicochemical effects of three cooking methods i.e. sous-vide (SV), cook-vide (CV) and traditional cooking (TC) on carrots and green peas. SV and CV were performed at 60–90 °C for various time periods (SV: green peas 50–100 min, carrots 90–150 min; CV: green peas 30–70 min, carrots 20–60 min) with respect to peroxidase test. These vegetables were also cooked at atmospheric pressure for 15, 30, 45 and 60 min and the results were compared with those obtained from SV and CV. Antioxidant activity, total phenolic and vitamin C analyses reflected less harm to the green peas in CV as compared to SV and TC. However, carrots were approximately half degraded during SV than in CV and TC as shown by the antioxidant activity. Moreover, total phenolic content of carrots was highly protected when cooked in SV method. The color change values (∆ E) of green peas were slightly lower in TC when compared to CV and SV, while in carrots, they were very close to each other's in all three methods. CV-cooked green peas and carrots provided the highest general acceptance for the sensorial properties. As a conclusion, TC had more adverse effects on the quality characteristics on green peas and carrots.

Dünya genelinde ve ülkemizdesıklıkla tüketilen domates salçası, gıda endüstrisinde vakum altında ısıl işlemuygulamasının en yaygın kullanıldığı ürünlerden biridir. Bu çalışmadadomates salçası üretimi için laboratuvar ölçeğinde tasarlanan, adsorbent maddeolarak küre zeolit ile modifiye edilen sistem içerisinde vakum altında veatmosferik basınçta evaporasyon denemeleri gerçekleştirilmiştir. Domates salçasının kalitesi üzerineevaporasyon tekniğinin etkisi, CCRD (Merkezi Tümleşik Tasarım) ile oluşturulandeneme deseni kullanılarak karşılaştırılmıştır. Evaporasyon işlem değişkenleriolarak sıcaklık (66-94°C) ve süre (2.4-6.6 saat) seçilmiştir. Farklı işlem koşullarındaüretilen domates salçası örneklerinde Briks, renk, siyah benek, pH, likopendeğişimi ve duyusal kalite analiz edilmiştir. Briks, renk, siyah benek miktarı,likopen ve duyusal kalite için genel olarak sıcaklık ve sürenin artışı,belirtilen kriterlerin sayısal değer artışında önemli rol oynamıştır. pHdeğerlerinde ise işlem değişkenlerinin etkisi görülmemiştir., Tomato paste,which is frequently consumed in our country and throughout the world, is one ofthe products that are produced through the heat treatmentunder vacuum in the food industry. In this study, tomato paste production wascarried out in laboratory scale modified system with spherical zeolite asadsorbent not only under vacuum but also at atmospheric condition. The effectsof evaporation techniques were compared using the experimental design generatedby CCRD (Central Composite Rotatable Design) with respect to tomato pastequality. Temperature (66-94°C) and time (2.4-6.6 hours) were selected asevaporation process conditions. Brix, colour, dark speck, pH, change in lycopenecontent and sensory quality of tomato paste samples produced at differentconditions were analysed. Generally, temperature and time increment for Brix,colour, amount of dark specks, lycopene and sensory quality had played animportant role in the increase of these properties. In pH values, no effect ofprocess parameters was observed.

Gıda maddelerinin çevresel etkenlerden korunması ve raf ömrünün arttırılması amacı ile çeşitli gıda işleme teknolojileri bulunmaktadır. Bunlardan biri de son zamanlarda artan bir ilgi ile kullanılan enkapsülasyon teknolojisidir. Enkapsülasyon için kullanılan fiziksel yöntemlerden biri olan akışkan yatak kaplama ile katı halde bulunan çekirdek materyaller, hava akımında akışkanlaştırılmakta ve kaplama materyali ile çekirdek materyalin yüzeyinde film tabakası oluşturulmaktadır. Akışkan yatak kaplama tekniğinin uygulanabilirliği, parçacık özelliklerinin yanı sıra; sistemde kullanılan işlem değişkenleri, çevre değişkenleri ve termodinamik faktörlerden önemli derecede etkilenmektedir. İşlem sonucunda oluşan kapsüllerin salınım karakteristikleri ise ısınma, çözünme, mekanik ya da kimyasal kırılma vd. çeşitli mekanizmalar ile değiştirilebilmekte ve kontrollü salınım sağlanabilmektedir. Akışkan yatak kaplama yöntemi ile kontrollü salınım avantajının yanı sıra homojen yapıda toz ürün oluşmakta, ince parçacıklar azalmakta, taşıma ve depolama özellikleri gelişmekte, reaktif bileşenler korunabilmekte ve istenmeyen tat ve koku engellenmektedir. Bu derlemede akışkan yatak kaplama mekanizması, akışkan yatak kaplama sistemleri ve bu sistemin gıda alanındaki uygulamaları üzerine yapılan çalışmalar incelenmiştir., There are various food-processing technologies with the aim of protecting foodstuffs from environmental factors and increasing their shelf life. One of these is encapsulation technology, which has recently been used with an increased interest. With the fluidized bed coating, which is one of the physical methods used for encapsulation, the solid core materials are fluidized via the air stream and a film layer is formed on the surface of the core material with the coating material. The applicability of the fluid bed coating technique, as well as particulate properties, is significantly influenced by process variables used in the system, environmental variables and thermodynamic factors. The release characteristics of capsules formed during the process can be changed by various mechanisms such as heating, dissolution, mechanical or chemical fracture etc. and controlled release can be achieved. The fluidized bed coating method not only has the advantage of controlled release but also provides a homogeneous powder product, reduction of fine particles, development of transport and storage facilities, protection of reactive components, and prevention unwanted taste and odour. In this study, researches on fluid bed coating mechanism, fluid bed coating systems and applications of fluid bed systems in the food industry have been reviewed.

Tüketici tercihlerini büyük ölçüde etkileyen ve ekonomik açıdan değerli olan aromalar, gıda endüstrisinde önemli bir yer tutmaktadır. Hassas ve uçucu olan bu değerli bileşenler, monomerler veya polimerler gibi kaplama materyallerinden oluşan kabuk ya da matrislerle enkapsüle edilebilmektedir. Oda sıcaklığında genellikle sıvı halde olan aroma bileşenlerinin enkapsülasyonu ile toz formda ürün elde edilirken, çevresel etkenlerden koruma ve raf ömründe artış gibi avantajlar sağlanabilmektedir. Aromaların enkapsülasyonunda püskürterek kurutma, püskürterek soğutma, ekstrüzyon, dondurarak kurutma, koaservasyon ve moleküler hapsetme gibi teknolojiler kullanılmaktadır. Bu derlemede, gıda endüstrisinde kullanılan aromaların çeşitli teknolojilerle enkapsülasyonu ile ilgili olarak yapılan çalışmalar incelenmiştir., Aroma, which has a great influence on consumer preferences and economic value, has an important place in the food industry. Techniques such as spray drying, spray cooling, extrusion, freeze drying, coacervation and molecular inclusion are used in the encapsulation of aroma components. in this study, studies on the encapsulation of aroma components with various technologies used in the food industry are reviewed.
