Purpose: To investigate whether the wettability of two zirconia (Zr) implant disk surfaces is affected by glycine and erythritol air polishing using the following wetting solutions as test mediums: saline, bovine serum albumin (BSA), bovine thrombin, and bovine artificial blood. Materials and Methods: The two types of Zr disks used were SDS (Swiss Dental Solutions; n = 6) and Patent (Zircon Medical AG; n = 6). Surface parameters (Sa, Sz, Sdr, Ssk, Sku, and Spd) were measured to determine their initial surface roughness. Air polishing was completed using glycine or erythritol powders using the AIRFLOW PERIO device (EMS Dental). The wettability of the disk surfaces was evaluated by the contact angle analysis applied to the treated and untreated disks using four wetting solutions, including saline, BSA, bovine thrombin, and bovine artificial blood. In total, 720 contact angle measurements were completed with n = 30 per group. Statistical analysis was performed using one-way ANOVA and the post-hoc Tukey HSD test. Results: The results indicate that SDS has a greater wettability than Patent before and after air polishing. The wettability of surfaces treated with glycine was hydrophobic in some cases. Erythritol increased the surface wettability of Zr disks more than glycine. BSA and bovine artificial blood had lower contact angles than saline and bovine thrombin for both types of untreated disks. Conclusions: The initial wettability of Zr disks differs between manufacturers, and air polishing with erythritol powder increases the wettability of Zr implant disks for saline, bovine serum, bovine thrombin, and bovine artificial blood. This study aims to develop a multigrain probiotic biscuit and evaluate the effect of erythritol as a sugar replacer on the rheological properties of dough, along with the physicochemical and organoleptic properties of biscuits. The higher viscoelasticity of dough was observed at a 25% sugar replacement level with erythritol, and the calorific value of biscuits was significantly (p < 0.05) reduced from 415.12 to 404.69 Cal/100 g with increasing in the sugar replacement from 0% to 75%. The biscuits with higher concentrations of erythritol showed reduced water activity (a w) and higher hardness values. From Pearson's correlation analysis, it was observed that the probiotic viability had a positive relation with moisture, fat, energy, a w, and diameter and a negative association with the protein and fiber content of biscuits. The 25% replacement of sugar with erythritol showed a higher probiotic count (> 7 log CFU/g) and improved physicochemical and sensory properties during the storage period, which was further confirmed by the principal component analysis. So, it was recommended that the partial replacement of sugar with erythritol up to 25% is desirable for developing low-calorie bakery products without any alteration in the functional groups and improving the internal structure of the biscuits. Erythritol is a sweetener polyol widely distributed in nature. Its industrial production is based on biotechnological fermentative processes using yeasts. It is used essentially in nutrition and pharmaceutical fields. However, due to its still high price, the use of erythritol is not widespread and is lower than that of other polyols. The use of erythritol for polymer synthesis remains largely unexplored by the scientific community. This work describes the synthesis and characterization of polyester, poly (erythritol sebacate) (PES), obtained by thermal polycondensation of erythritol and sebacic acid in a two steps approach. A prepolymerization step was realized at different temperatures (150 °C, 160 °C and 170 °C, respectively) followed by a cure step at 150 °C. It was found that using a higher temperature allows the same degree of polymerization (50%) to be achieved in a shorter period, but this leads to prepolymers with a more heterogeneous oligomeric composition. This is reflected in the final properties of the polymers after curing. Synthesis at 150 °C produced a polymer with superior mechanical performance (ultimate tensile strength: 0.5 MPa; Young's modulus: 0.44 MPa: elongation at break: 123%) and higher chemical resistance to solvents than polymers synthesized at 160 °C and 170 °C. The glass transition temperature (Tg) is between − 20 and 0 °C for all polymers and density is 1.08 g/cm3. Based on these results, we believe that PES is a good elastomer with tunable properties and potential for selective absorption of molecules, such as ethanol, that could be useful for beverage industry and biotechnological applications. AIM. To study the effect of the non-calorie sweetener erythritol and the combination of erythritol and sucrose on postprandial secretion of insulin and peptide-YY (PYY).MATERIALS AND METHODS. A comparative study was conducted to assess the effect of erythritol, sucrose and a combination of erythritol and sucrose on postprandial glucose, IRI and PYY levels. The participants were selected from among healthy volunteers, aged 18 to 35 years. If the participants met the selection criteria, further stages of the study were carried out. During the study, each participant took a solution of sucrose 75 g, erythritol 75 g or a mixture of sucrose and erythritol (75 g and 25 g, respectively). Further determination of glucose and insulin was carried out every 30 minutes, so glucose, insulin and PYY values were determined initially and at the 30th, 60th, 90th and 120th minutes.RESULTS. Data were obtained confirming the absence of the effect of erythritol on postprandial secretion of insulin and glucose. In our work, we also demonstrated a decrease in postprandial glycemia when taking sucrose and erythritol together. Sucrose and erythritol equally stimulated PYY secretion.CONCLUSION. Our data show that erythritol can be considered as an optimal sugar substitute in people with impaired carbohydrate metabolism and obesity.

Erythritol is a four-carbon sugar alcohol naturally produced by microorganisms as an osmoprotectant. As a new sugar substitute, erythritol has recently been popular on the ingredient market because of its unique nutritional characteristics. Even though the history of erythritol biosynthesis dates from the turn of the twentieth century, scientific advancement has lagged behind other polyols due to the relative complexity of making it. In recent years, biosynthetic methods for erythritol have been rapidly developed due to an increase in market demand, a better understanding of metabolic pathways, and the rapid development of genetic engineering tools. This paper reviews the history of industrial strain development and focuses on the underlying mechanism of high erythritol production by strains gained through screening or mutagenesis. Meanwhile, we highlight the metabolic pathway knowledge of erythritol biosynthesis in microorganisms and summarize the metabolic engineering and research progress on critical genes involved in different stages of the synthetic pathway. Lastly, we talk about the still-contentious issues and promising future research directions that will help break the erythritol production bottleneck and make erythritol production greener and more sustainable. Long-term consumption of erythritol, a widely used sugar substitute, has been associated with increased risks of thrombosis and cardiometabolic diseases. In this study, we investigated the effects and mechanisms of allulose in mitigating these risks compared to erythritol using the clusterProfiler tool in R (version 4.12.6). Since a high-fat diet (HFD) is known to enhance platelet aggregation, we compared the pathways related to these processes between groups of mice treated with allulose and those treated with erythritol. While erythritol exacerbated HFD-induced increased platelet aggregation, allulose treatment significantly reduced it. Further analysis of platelet gene expression in sickle cell disease (SCD) patients to explore the potential of using sugar substitutes revealed that platelet coagulation mechanisms could be exacerbated by HFD. Additionally, the top up- and downregulated pathways in SCD were significantly reduced in the allulose-treated group compared to the erythritol group. Specific mechanisms related to this include the mitochondrial complex I and mitochondrial translational process as potential pathological factors in platelet coagulation related to SCD. Therefore, this study demonstrates that allulose may offer a safer alternative to erythritol in dietary applications, especially in individuals susceptible to thrombotic events, by modulating critical pathways associated with platelet function and mitochondrial activity. The present work aimed to evaluate the effectiveness of erythritol as an osmotic agent in the osmotic dehydration (OD) process of Japanese quince fruits and to assess its effects on their physicochemical and antioxidant properties. The efficiency of the OD process was determined by examining its kinetics and comparing the results to those from a sucrose solution. In selected osmotically dehydrated fruits, the following parameters were determined: dry matter content, total acidity, pH, sugar profile, color parameters, total phenolic and flavonoid content, antioxidant activity (DPPH and ABTS assays), and vitamin C content. Moreover, principal component analysis (PCA) was also performed. Generally, the OD process using a 40% erythritol solution demonstrated the most efficient kinetics among all osmotic agents tested; however, fruits dehydrated in this solution also showed the most significant changes in physicochemical and antioxidant properties compared to fresh fruits. Remarkably, Japanese quince fruits dehydrated in a 30% erythritol solution exhibited higher levels of total phenolic, flavonoid, vitamin C, and antioxidant activity than those treated with a 50% sucrose solution, despite displaying similar dehydration kinetics. The use of erythritol solutions also led to a decrease in sugar content. In turn, PCA analysis confirmed a correlation between pH values and the L* color parameter, with the highest L* value observed in fruits dehydrated with the sucrose solution. Thus, erythritol may be utilized as a low-calorie alternative to sucrose as an osmotic agent while simultaneously minimizing the loss of antioxidant compounds. [ABSTRACT FROM AUTHOR]

Osmotic dehydration as a process of removing water from food by immersing the raw material in a hypertonic solution is used primarily to extend the shelf life of products and as a pretreatment before further processing steps, such as drying and freezing. However, due to the bi-directional mass transfer that occurs during osmotic dehydration, the process can also be used to shape sensory properties and enrich the plant matrix with nutrients. The purpose of this study was to evaluate the effect of osmotic dehydration on the absorption of potassium by beet pulp immersed in various hypertonic solutions (sucrose, inulin, erythritol, xylitol solutions) with the addition of three chemical forms of potassium (gluconate, citrate, chloride) using variable process conditions. The study proved that osmotic dehydration is an effective way to enrich food. The highest potassium content (5779.03 mg/100 g) was found in a sample osmotically dehydrated in a 50% erythritol solution with 5.0% potassium chloride addition with a process that lasted 180 min and took place at 30 °C. The results obtained indicate the high potential of osmotic dehydration in improving the health values of food products. Background: Supragingival polishing is a crucial part of nonsurgical periodontal therapy. In recent years, air polishing has been used for this purpose, introducing different polishing powders. The purpose of the following study was to investigate the damage to the gingival margin during air polishing by an inexperienced operator. Methods: Five porcine models were polished by means of three different polishing powders: calcium carbonate, sodium bicarbonate, and erythritol. Their impact on the gingival margin was examined by means of histological and scanning electron microscopical observations and compared to healthy samples and samples polished with a polishing brush and paste. Results: The histological observations revealed superficial to minor lesions limited in the epithelium by all the groups tested. Both examination protocols demonstrated less invasiveness of the erythritol-based polishing powder. Conclusions: Within the limitations of the present study, it could be concluded that air polishing is a safe instrumentation method for periodontal therapy even in inexperienced hands when the exact protocol is followed. Currently, the yeast Yarrowia lipolytica is regarded as one of the most promising producers of protein, lipids, polyols, organic acids, and other metabolites. The objective of enhancing the efficiency of the target product biosynthesis can be achieved through the improvement of the strains-producers and the optimization of the cultivation conditions. The present review assesses the potential of continuous cultivation methods (chemostat, turbidostat, pH-auxostat, changestats, etc.) in order to gain insight into the impact of strains and cultivation conditions on the productivity of the developed bioprocesses. The utilization of continuous cultivation methods enables the implementation of processes under controlled and reproducible conditions, thus stabilizing the parameters of the cultivation and the physiological state of the producer, and obtaining homogeneous samples. The review focuses on nitrogen-limited chemostat cultures, which represent the most commonly employed strategy for investigating the physiological and biochemical characteristics of the yeast Y. lipolytica and for developing the processes for the production of lipids, erythritol, citric acid, and recombinant proteins. In order to improve the utilization value of the erythritol mother liquor, the separation and purification of the erythritol mother liquor was selected in this study. The selected chromatographic separation programme for erythritol crystallizing mother liquor is as follows: Firstly, erythritol is resolved from mannitol and arabitol with DTF-01Ca (Suqing Group) resin and then mannitol is resolved from arabitol with 99Ca/320 (Dowex) resin. At the same time, the chromatographic conditions of the DTF-01Ca (Suqing Group) and 99Ca/320 (Dowex) resins were optimized, resulting in an optimal separation temperature and mobile phase flow rate of 70 °C, 10 ml/min. On this basis, a single-column chromatographic model was used to calculate the TD model parameter ( N ) and the mass transfer coefficient ( k m ) of the separation of erythritol mother liquor by DTF-01Ca (Suqing Group) and 99Ca/320 (Dowex) resins. The adsorption isotherms, TD model parameter ( N ) and the mass transfer coefficient ( k m ) provides data references for the design and operation of the simulated moving beds (SMB) separation system for the industrial-scale separation of erythritol crystallizing mother liquor. Backgound: The aim of this randomized controlled trial was to assess clinical and patient‐reported outcomes of subgingival instrumentation (SI) with adjunctive use of erythritol airflowing (EAF) compared to SI alone in the treatment of periodontitis. Methods: Twenty‐six participants with Stage III/IV periodontitis requiring nonsurgical periodontal treatment were randomly allocated into two treatment groups: SI with EAF or SI alone. Clinical parameters of percentage of probing pocket depths (PPDs) of ≥5 mm, full mouth bleeding and plaque scores (FMBS and FMPS), and PPD values were recorded at baseline, and at 3 and 6 months posttreatment. A visual analogue scale was used to evaluate postoperative participants' perception of pain, swelling, bleeding, bruising, and root sensitivity. The impact of periodontal treatment on quality of life was assessed using the General Oral Health Assessment Index (GOHAI) at six months. Results: A total of 26 participants with Stage III/IV periodontitis completed the 6‐month follow‐up. SI with or without EAF resulted in a statistically significant reductions in the FMBS, FMPS, PPDs, and percentage of PPDs of ≥5 mm at the 3‐ and 6‐month follow‐up visits. There was no statistically significant difference between the two treatment groups for any time interval. Participants receiving SI/EAF exhibited a higher reduction in FMBS compared to those in SI alone group at 3 (SI/EAF: 19.4 ± 11.9, SI alone: 30.1 ± 20.5; P = 0.12) and 6 months (SI/EAF: 14.3 ± 9.6, SI alone: 24.5 ± 18.2; P = 0.09). A lower percentage of sites with deep PPDs (≥5 mm) was also noted amongst participants in the SI/EAF group compared to SI alone at 3 months (SI/EAF: 14.3 ± 14.1, SI alone: 19.2 ± 20.3; P = 0.48) and 6 months (SI/EAF: 8.3 ± 10.0, SI alone: 15.4 ± 17.4; P = 0.22). Patient‐reported outcomes showed no significant differences between the two treatment groups, except in the psychosocial domain of the GOHAI at 6 months favoring the SI/EAF group (P = 0.03). Conclusions: Within the limitations of the study, the adjunctive use of EAF in addition to SI in the treatment of Stage III/IV periodontitis did not result in a significant improvement in clinical parameters. Brucellosis is a bacterial zoonosis caused by the genus Brucella, which mainly affects domestic animals. In these natural hosts, brucellae display a tropism towards the reproductive organs, such as the placenta, replicating in high numbers and leading to placentitis and abortion, an ability also exerted by the B. melitensis live-attenuated Rev1 strain, the only vaccine available for ovine brucellosis. It is broadly accepted that this tropism is mediated, at least in part, by the presence of certain preferred nutrients in the placenta, particularly erythritol, a polyol that is ultimately incorporated into the Brucella central carbon metabolism via two reactions dependent on transaldolase (Tal) or fructose-bisphosphate aldolase (Fba). In the light of these remarks, we propose that blocking the incorporation of erythritol into the central carbon metabolism of Rev1 by deleting the genes encoding Tal and Fba may impair the ability of the vaccine to proliferate massively in the placenta. Therefore, a Rev1ΔfbaΔtal double mutant was generated and confirmed to be unable to use erythritol. This mutant exhibited a reduced intracellular fitness both in BeWo trophoblasts and THP-1 macrophages. In the murine model, Rev1ΔfbaΔtal provided comparable protection to the Rev1 reference vaccine while inducing fewer adverse reproductive events in pregnant animals. Altogether, these results postulate the Rev1ΔfbaΔtal mutant as a reproductively safer Rev1-derived vaccine candidate to be studied in the natural host. [ABSTRACT FROM AUTHOR]

Background: Recently, elevated levels of plasma erythritol have been associated with major adverse cardiovascular events (MACE). It is known that people with HIV (PWH) have a higher cardiovascular disease burden. Whether PWH have higher levels of plasma erythritol has not been evaluated. This study aimed to assess if blood erythritol levels are elevated in PWH and to examine relationships between erythritol and dietary, cardiometabolic, inflammatory, and gut health markers. Methods: Plasma erythritol levels were measured using frozen samples from 162 participants, including 109 PWH and 53 people without HIV (PWoH) in a parent study. General linear models were used to assess the linear relationship between characteristics, cardiovascular measures, markers of body composition, inflammation, and gut integrity with plasma erythritol. Logistic regression was used to assess risk factors associated with PWH, and cumulative logit models were used to investigate which factors were associated with having the highest plasma erythritol levels among PWH. Results: Compared to PWoH, PWH had higher plasma erythritol levels (p = 0.03). Every 10% increase in VLDL (p = 0.01), visceral adipose tissue (p < 0.0001), or TNFrI (p = 0.01) was associated with an approximately 1% increase in plasma erythritol. Among PWH, HgbA1c (p = 0.003), TNFrI (p = 0.002), and IFAB-P (p = 0.004) were associated with having the highest tertile of plasma erythritol (≥3.6 μM). Compared to PWoH, PWH were more than two times as likely (p = 0.03) to have plasma erythritol ≥ 3.6 μM. Conclusions: We identified positive associations between plasma erythritol levels and several factors, including HIV status, BMI, adipose tissue, TNFr1, HbA1c, and VLDL. These results underscore the importance of further investigating the role of elevated plasma erythritol levels in people with HIV, particularly in light of their increased vulnerability to cardiovascular and metabolic diseases. Numerous works have reported that magnetic fields serve as signals capable of influencing microbial metabolism. However, little is known about the effect of magnetic field on erythritol production by the model microorganism Yarrowia lipolytica (Y. lipolytica). Therefore, we investigated the effect of low-frequency alternating magnetic fields (LF-AMF) with different magnetic field intensities (0–1.5 mT) and different magnetic field treatment times (1–10 days) on the production of erythritol by Y. lipolytica -JZ204. The optimal treatment condition was 0.5 mT for 8 days. As a result, a maximal erythritol yield was achieved 63.74 g/L, the biomass was reached 37 g/L, and the specific erythritol yield per unit of biomass was 1.7227 g/g, which were 60.72%, 32.09%, and 24.85% higher than the control, respectively. We investigated the internal mechanism of magnetic fields impact by using transcriptomics and RT-qPCR technology. This study demonstrated the effectiveness of LF-AMF in enhancing erythritol production by Y. lipolytica JZ-204, providing insights for the application of magnetic field in assisting microbial fermentation and improving the synthesis of beneficial products. BACKGROUND: Development of insecticide resistance in the major malaria vectors has necessitated the development of novel vector control tools. One such strategy involves the use of toxic sugar baits that targets the sugar‐feeding behaviour of mosquito vectors. In this study, we investigated the potential of polyols, as a toxic food (sugar) source in toxic sugar baits against the malaria vector Anopheles stephensi Liston. We examined the acute toxicity of six polyols, namely, erythritol, glycerol, mannitol, propylene glycol (PG), sorbitol, and xylitol on adult female An. stephensi mosquitoes at two different concentrations – 2% and 10%. We also studied changes in fecundity, egg hatchability and mid‐gut peroxide levels induced by polyol exposure. RESULTS: Among the six polyol compounds tested, PG was most toxic and lethal followed by glycerol and erythritol (P < 0.001) compared to the control (sucrose). PG induced acute mortality at different tested concentrations. In the erythritol‐ and glycerol‐fed groups, a dose‐dependent effect on mortality was observed. Glycerol evidently reduced fecundity and egg‐hatchability in gonotrophic cycles G1 and G2. Sucrose was the preferred food source (48%), followed by erythritol (18%), PG (10%) and glycerol (8%). Ingestion of polyols increased peroxide levels in mosquito guts, which persisted for extended durations ultimately resulting in rapid mortality (P < 0.05). CONCLUSION: The present study highlights the usefulness of sugar polyols for the development of toxic sugar baits with minimal yet effective ingredients. Erythritol is a natural non-caloric sweetener, which is produced by fermentation and extensively applied in food, medicine and chemical industries. The final step of the erythritol synthesis pathway is involved in erythritol reductase, whose activity and NADPH-dependent become the limiting node of erythritol production efficiency. Herein, we implemented a strategy combining molecular docking and thermal stability screening to construct an ER mutant library. And we successfully obtained a double mutant ERK26N/V295M (ER*) whose catalytic activity was 1.48 times that of wild-type ER. Through structural analysis and MD analysis, we found that the catalytic pocket and the enzyme stability of ER* were both improved. We overexpressed ER* in the engineered strain ΔKU70 to obtain the strain YLE-1. YLE-1 can produce 39.47 g/L of erythritol within 144 h, representing a 35% increase compared to the unmodified strain, and a 10% increase compared to the strain overexpressing wild-type ER. Considering the essentiality of NADPH supply, we further co-expressed ER* with two genes from the oxidative phase of PPP, ZWF1 and GND1. This resulted in the construction of YLE-3, which exhibited a significant increase in production, producing 47.85 g/L of erythritol within 144 h, representing a 63.90% increase compared to the original chassis strain. The productivity and the yield of the engineered strain YLE-3 were 0.33 g/L/h and 0.48 g/g glycerol, respectively. This work provided an ER mutation with excellent performance, and also proved the importance of cofactors in the process of erythritol synthesis, which will promote the industrial production of erythritol by metabolic engineering of Y. lipolytica. Engineering the glycerol‐3‐phosphate pathway could enhance erythritol production by accelerating glycerol uptake. However, little work has been conducted on the alternative dihydroxyacetone (DHA) pathway in Yarrowia lipolytica. Herein, this route was identified and characterized in Y. lipolytica by metabolomic and transcriptomic analysis. Moreover, the reaction catalyzed by dihydroxyacetone kinase encoded by dak2 was identified as the rate‐limiting step. By combining NHEJ‐mediated insertion mutagenesis with a push‐and‐pull strategy, Y. lipolytica strains with high‐yield erythritol synthesis from glycerol were obtained. Screening of a library of insertion mutants allows the identification of a mutant with fourfold increased erythritol production. Overexpression of DAK2 and glycerol dehydrogenase GCY3 together with gene encoding transketolase and transaldolase from the nonoxidative part of the pentose phosphate pathway led to a strain with further increased productivity with a titer of 53.1 g/L and a yield 0.56 g/g glycerol, which were 8.1‐ and 4.2‐fold of starting strain. Introduction Sweeteners are a common sugar alternative, especially in combating obesity and diabetes. With low calorie content, they appeal to health-conscious individuals. The food industry uses natural options like stevia or erythritol and synthetic ones such as aspartame or saccharin. While recognized as safe at recommended doses, debates continue about their long-term effects, emphasizing the need for further research. This paper explores the properties, benefits, and risks of sweeteners. Aim of the Study This study examines the effects of sweeteners on human health and evaluates their suitability as sugar substitutes for modern consumers, highlighting their benefits and potential risks. Materials and Methods An analysis of PubMed papers was conducted using keywords: sweeteners, artificial sweeteners, erythritol, acesulfame potassium, sucralose, aspartame, and sugar alternatives. Basic Results Both natural and synthetic sweeteners are used as sugar substitutes to address concerns about excessive sugar intake. Research indicates they help reduce calorie consumption and control blood sugar levels. However, uncertainties remain about their long-term health effects. Some studies suggest possible changes in metabolism or gut microbiota, but evidence is inconclusive. Regulatory bodies like the FDA deem approved sweeteners safe within recommended daily limits. Despite their advantages, further research is needed to fully understand their long-term impact. Conclusion Sweeteners are gaining popularity as sugar alternatives, particularly in the context of obesity and diabetes. Their variety allows for diverse dietary applications. While safe within recommended doses, questions about their long-term effects persist. They aid in weight control and glucose regulation but are not universally suitable. A balanced approach and further research are crucial.

Abstract Background The aim of the randomized controlled clinical trial study was to evaluate the effectiveness in reducing pathologically increased pocket probing depths (PPD > 3 mm) using the Guided Biofilm Therapy (GBT) protocol (adapted to the clinical conditions in non-surgical periodontal therapy (NSPT): staining, air-polishing, ultrasonic scaler, air-polishing) compared to conventional instrumentation (staining, hand curettes/sonic scaler, polishing with rotary instruments) both by less experienced practitioners (dental students). Methods All patients were treated according to a split-mouth design under supervision as diseased teeth of quadrants I/III and II/IV randomly assigned to GBT or conventional treatment. In addition to the treatment time, periodontal parameters such as PPD and bleeding on probing (BOP) before NSPT (T0) and after NSPT (T1: 5 ± 2 months after T0) were documented by two calibrated and blinded examiners (Ethics vote/ Trial-register: Kiel-D509-18/ DRKS00026041). Results Data of 60 patients were analyzed (stage III/IV: n = 36/ n = 24; grade A/ B/ C: n = 1/ n = 31/ n = 28). At T1, a PPD reduction of all diseased tooth surfaces was observed in 57.0% of the GBT group and 58.7% of the control group (p = 0.067). The target endpoint (PPD ≤ 4 mm without BOP) was achieved in 11.5% for GBT (conventional treatment: 11.2%; p = 0.714). Cookie is a popular and well-liked food but is high in calories and low in fiber. Replacing sugar by artificial sweeteners in cookies is expected to reduce the calorific value of cookies. This study aimed to evaluate the effect of adding artificial sweeteners on the physical, sensory, microbiological characteristics, and functional benefits of cookies. A completely randomized design with sweeteners (stevia and erythritol) and concentrations (0.2%, 0.4%, and 0.5%) was used. The results showed that stevia and erythritol had significantly affected all test parameters, except in the mold/yeast parameters of cookies. The adding of stevia and erythritol significantly decreased L*, a*, b*, hedonic scores, caloric values, dietary fiber contents, total microbial values but significantly increased hardness and antioxidant capacities (IC50) of final cookies. All sensory ratings of the sucrose and formulated cookies were >3 points, which demonstrated that stevia and erythritol can be sugar replacers that can reduce calorie cookies. The findings can guide in the reformulation of low-calorie, high-fiber, and non-gluten cookies.

In order to increase the kinds of jelly and improve the added value of Phyllanthus emblica L. and passion fruit, using P. emblica L. and passion fruit as main raw materials, sensory score, color and texture properties as indicators, the effects of the added amount of passion fruit juice, compound gum and erythritol on the quality of the compound jelly of P. emblica L. and passion fruit were explored by single factor experiments. On this basis, taking sensory score as the response value, the formulation of the compound jelly of P. emblica L. and passion fruit was optimized by response surface methodology. The results showed that the best formulation of the compound jelly of P. emblica L. and passion fruit was as follows: The added amount of passion fruit juice was 19%, the added amount of compound gum was 2.0% (the mass ratio of curdlan gum, konjac gum and xanthan gum was 30:3:7), and the added amount of erythritol was 26.8%. The compound jelly prepared under these conditions was orange in color, lustrous, delicate in taste, with the characteristic flavors of P. emblica L. and passion fruit being outstanding and harmonious. It tasted sweet and sour, with long sweet aftertaste, and the hardness, elasticity and chewiness were moderate. Its overall acceptability was very good, and its sensory score was 8.65 points. This study could provide a reference for the development of low-sugar compound jelly of P. emblica L. and passion fruit without adding flavor, pigment and sucrose.

Abstract Background There is insufficient clinical and microbiological evidence to support the use of diode laser and air-polishing with erythritol as supplements to scaling and root planning(SRP). The aim of the current study is to evaluate the clinical and microbiologic efficacy of erythritol subgingival air polishing and diode laser in treatment of periodontitis. Methods The study encompassed twenty-four individuals seeking periodontal therapy and diagnosed with stage I and stage II periodontitis. Eight patients simply underwent SRP. Eight more patients had SRP followed by erythritol subgingival air polishing, and eight patients had SRP followed by diode laser application. At baseline and six weeks, clinical periodontal parameters were measured, including Plaque Index (PI), Gingival Index (GI), periodontal Probing Depth (PPD), and Clinical Attachment Level (CAL). The bacterial count of Aggregatibacter actinomycetemcomitans(A.A), Porphyromonas gingivalis (P.G) was evaluated at different points of time. Results The microbiological assessment revealed significant differences in the count of A.A. between the laser and erythritol groups immediately after treatment, indicating a potential impact on microbial levels. However, the microbial levels showed fluctuations over the subsequent weeks, without statistically significant differences. Plaque indices significantly decreased post-treatment in all groups, with no significant inter-group differences. Gingival indices decreased, and the laser group showed lower values than erythritol and control groups. PPD and CAL decreased significantly across all groups, with the laser group exhibiting the lowest values. Conclusion The supplementary use of diode laser and erythritol air polishing, alongside SRP, represents an expedited periodontal treatment modality. This approach leads to a reduction in bacteria and improvement in periodontal health. Purpose: To assess the root surface roughness and substance loss induced by chemical and chemomechanical challenges on root surfaces pretreated with ultrasonic instrumentation, a hand scaler, or erythritol airflow. Materials and Methods: One hundred twenty (120) bovine dentin specimens were used in this study. Specimens were divided into eight groups and treated as follows: groups 1 and 2: polished with 2000- and 4000-grit carborundum papers but not instrumented ('untreated'); groups 3 and 4: hand scaler; groups 5 and 6: ultrasonic instrumentation; groups 7 and 8: erythritol airflow. Samples from groups 1, 3, 5, and 7 then underwent a chemical challenge (5 x 2 min HCl [pH 2.7]), whereas samples from groups 2, 4, 6, and 8 were subjected to a chemomechanical challenge (5 x 2 min HCl [pH 2.7] + 2 min brushing). Surface roughness and substance loss were measured profilometrically. Results: The least substance loss through chemomechanical challenge was noted after erythritol airflow treatment (4.65 ± 0.93 μm), followed by ultrasonic instrumentation (7.30 ± 1.42 μm) and the hand scaler (8.30 ± 1.38 μm); the last two (hand scaler and ultrasonic tip) did not differ statistically significantly. The highest roughness after chemomechanical challenge was observed on ultrasonically treated specimens (1.25 ± 0.85 μm), followed by hand-scaled specimens (0.24 ± 0.16 μm) and those subject to erythritol airflow (0.18 ± 0.09 μm); there was no statistically signficant difference between the latter two, but they both differed statistically significantly from the ultrasonically treated specimens. No statistically significant difference in substance loss through the chemical challenge was observed between specimens pretreated by the hand scaler (0.75 ± 0.15 μm), ultrasonic tip (0.65 ± 0.15 μm), and erythritol airflow (0.75 ± 0.15 μm). The chemical challenge smoothed the surfaces treated with the hand scaler, ultrasonic tip, and erythritol airflow. Conclusion: Dentin pretreatment with erythritol powder airflow resulted in a higher resistance to chemomechanical challenge than did dentin treated ultrasonically or with the hand scaler.
