- Abstract
[Objective]This study aims to make clear the composition & interrelation of protein and amino acid of 10 germplasm resources of Cyperus esculentus. [Method]10 germplasm resources of Cyperus esculentus were introduced, their compositions of protein, fat, coarse fiber and amino acid were measured. Comparison analysis was done using SPSS software. [Result]The compositions of protein, fat, coarse fiber and essential amino acid of the 10 germplasm resources of Cyperus esculentus are significantly different;in the amino acid of the 10 germplasm resources of Cyperus esculentus, the content of arginine is the highest and the content of methionine is the lowest. The variation coefficient of proline is the biggest and that of alanine is the smallest; there was no significant correlation between proline and other 15 amino acids, between methionine and aspartate, serine, histidine, lysine, alanine and arginine, and between lysine and tyrosine and valine. The contents of methionine were negatively correlated with threonine, glutamic acid, valine, glycine, leucine, isoleucine and phenylalanine. The contents of methionine and tyrosine were significantly negatively correlated. There was a significant positive correlation between glutamic acid and arginine content. The contents of other remaining amino acids showed a significant positive correlation. [Conclusion]The contents of serine, methionine and proline can comprehensively reflect the amino acid content of Cyperus esculentus. [ABSTRACT FROM AUTHOR]
