The polyphenol composition of grape seeds powder (GSP) and defatted grape seeds flour (DGSF) in water­alcohol (ethanol, isopropanol) extracts was studied by the chromatographic method. There was established the content of antioxidants, which are present in the form of phenolic acids (gallic, ellagic), stilbenes (resveratrol) and flavonoids, first of all, flavanols (catechin, epicatechin) and flavonols (kaemferol, myricetin, quercetin and its derivative glycosides). It was shown that the total content of polyphenols reaches a maximum size of about 4.5 % in gallic equivalent of the powder weight at the extraction of water­ethanol mixture with ethanol content of 50 % (w/w). The effect of phenolic antioxidants on peroxide (PV) and acid (AV) values of confectionery fats of lauric and non­lauric types in the model systems was studied as the markers of the rancidity formation process. It was proved that thanks to a high content of antioxidants in grape powders, the introduction of these powders in the composition of samples significantly slows down the process of auto­oxidation of fats. It was shown that grape powders as vegetable raw material are more stable in terms of catalyzing the process of fats hydrolysis in confectionery glaze. This is evidenced by the data on the activity of lipase enzyme, the magnitude of which is lower in the samples of grape seeds powders – 1.03 and 1.12 nm 3 /g for GSP and DGSF, respectively, compared with that of different samples of cocoa powder – 0.84 and 1.87 nm 3 /g. The study into changes in acid value of the samples also showed that the addition of GSP and DGSF as the source of antioxidants significantly inhibits the process of hydrolysis of fats to free fatty acids. The obtained results have a practical significance for the improvement of the process of confectionary glaze production in the direction of partial substitution of cocoa powder with grape seeds powders. This contributes to the creation of a product with a high nutritional value and which is more resistant to damage as a result of the process of oxidation and hydrolysis of fats

Вивчено ефективність порошку з кісточок червоного винограду при виробництві варено-копченої ковбаси комбінованого складу. Встановлено, що використання порошку з кісточок червоного винограду сорту Ізабелла до складу варено-копчених ковбас уповільнює окислювальні процеси в продукті, зменшуючи утворення перекисів і гідро перекисів і уповільнює накопичення вторинних продуктів окислення, зберігаючи і поліпшуючи його якість на все протягом терміну зберігання. Изучена эффективность порошка из косточек красного винограда при производстве варено-копченой колбасы комбинированного состава. Установлено, что использование порошка из косточек красного винограда сорта Изабелла в состав варено-копченых колбас замедляет окислительные процессы в продукте, уменьшая образование перекисей и гидроперекисей и замедляет накопление вторичных продуктов окисления, сохраняя и улучшая его качество на все течение срока хранения. The efficiency of red grape seed powder in the production of cooked-smoked sausage of combined composition has been studied. It was found that the use of powder from the seeds of red grapes Isabella in cooked smoked sausages slows down the oxidation processes in the product, reducing the formation of peroxides and hydro peroxides and slows the accumulation of secondary oxidation products, preserving and improving its quality throughout storage.

Grape pathogenesis-related proteins can cause haze in wine that is undesirable for consumers. Bentonite is used to remove these proteins but is a non-renewable natural material and reduces wine volume due to poor settling. As a potential bentonite alternative, grape seeds powder (GSP) was added to four wines and two grape juice varieties. Addition to wine required high doses (25–32 g/L) for protein removal and haze prevention and this induced changes to wine composition. By contrast, addition to grape juice prior to fermentation required substantially lower doses of GSP (5 g/L) to prevent haze formation. Further 20 g/L of GSP added to the must induced less changes to wine composition than direct addition of GSP to the wine. No changes were recorded in the efficacy of protein removal by changing the GSP source (red or white grape marc), or by using grape seed roasting. Despite the need for additional trials, these preliminary results suggest that GSP may be considered as a viable alternative to bentonite especially when added to juice prior to fermentation.

В качестве маркеров процесса образования прогорклости исследовано влияние фенольных антиоксидантов на перекисное (PV) и кислотное (AV) числа кондитерских жиров лауринового и нелауриновый типов в модельных системах. Доказано, что благодаря высокому содержанию в виноградных порошках антиоксидантов, введение этих порошков в состав образцов существенно замедляет процессы автоокисления жиров. Показано, что виноградные порошки как растительное сырье являются более стабильными с точки зрения активизации процесса гидролиза жиров в кондитерской глазури. Об этом свидетельствуют данные по активности фермента липаза, величина которой ниже в образцах порошков из виноградных косточек - 1,03 и 1,12 см3/г для GSP и DGSF, соответственно, по сравнению с таковой у разных образцов какао-порошков - 0,84 и 1,87 см3/г. Исследование изменения кислотного числа образцов также показало, что добавление GSP и DGSF как источника антиоксидантов значительно ингибирует процесс гидролиза жиров до свободных жирных кислот. Полученные результаты имеют практическое значение для совершенствования процесса производства кондитерской глазури в направлении частичной замены какао-порошка порошками из виноградных косточек. В якості маркерів процесу утворення згірклості, що зумовлена окисненням та гідролізом жирів, досліджено вплив фенольних антиоксидантів на перекисне (PV) та кислотне (AV) числа кондитерських жирів лауринового та нелауринового типів в модельних системах. Доведено, що завдяки високому вмісту у виноградних порошках антиоксидантів, додавання цих порошків до складу зразків суттєво уповільнює процеси автоокиснення жирів. Показано, що виноградні порошки як рослинна сировина є більш стабільними з точки зору активізації процесу гідролізу жирів у кондитерській глазурі. Про це свідчать дані з активності ферменту ліпаза, що констатують нижчі значення у зразках порошків з виноградних кісточок – 1,03 та 1,12 см3/г для GSP та DGSF, відповідно, порівняно з такими у різних зразках какао-порошків – 0,84 та 1,87 см3/г. Дослідження зміни кислотного числа зразків також засвідчило, що додаванням GSP та DGSF як джерела антиоксидантів значно інгібує процес гідролізу жирів до вільних жирних кислот. Отримані результати мають практичне значення для удосконалення процесу виробництва кондитерської глазурі в напрямку часткової заміни какао-порошку порошками з виноградних кісточок. Це сприятиме створенню продукту підвищеної харчової цінності та більш стійкого до псування жирів
