Abstract

The article focuses on miscellaneous topics related to food science and technology, that were featured at the website of the Institute of Food Technologists (IFT). Topics discussed include a study published in the "Journal of Food Science" revealing that peeling tomatoes before they are juiced when in cold break process enhance the flavor and viscosity of tomato juice, the new Learning Management System Path launched by IFT and the recipe for Counterfeit Duck Confit from Chef David Lebovitz.
