Abstract

The article discusses the relationships between Midwesterners and the cooking and consumption of pot roasts as of 2016, and it mentions chef Gavin Kaysen's childhood in Bloomington, Minnesota, as well as Kaysen's Spoon and Stable restaurant in Minneapolis, Minnesota and his pot roast recipe which is adapted from a version created by his grandmother Dorothy Kaysen. Shoulder cuts of beef are assessed, along with comfort food, mushrooms, and parsley root cooked in milk.
