Abstract

Effects of sex and age on fatty acids profile in the meat of Carassius spp. were evaluated. Carassius auratus fillets displayed a higher content of SFA and MUFA than Carassius carassius. In contrast, Carassius carassius had a higher content of PUFA (higher proportion of linoleic, arachidonic, eicosapentaenoic, docosatetraenoic and docosapentaenoic acids) and total n-3 and n-6 PUFA, compared with Carassius auratus. Moreover, γ-linolenic acid was higher in fillets from Carassius auratus. What is more, fillets from females had a greater content of eicosapentaenoic acid than males. Finally, 4-year-old fish had a lower content of ALA, higher MUFA content and better nutritional indexes (n-3/n-6, AI) than 3-year-old fish. [ABSTRACT FROM AUTHOR]
