Abstract

Archaeozoology in the Maya area is usually referred to the pre-Hispanic period leaving aside the conquest, colonial and post-colonial periods. These periods are undoubtedly equally important for zooarchaeological research, as they allow us to delve deeper into human-fauna relations during a socially changing period in terms of economy and consumption habits. Therefore, in this paper, we will define and explain the parameters of historical zooarchaeology, particularly in Yucatán, as well as its contributions through the study of the archaeological remains of fauna recovered in localities from the Historical Center of Mérida city, the town of Izamal and hacienda San Pedro Cholul. This work represents one of the few archaeofaunistic investigations focused on these temporalities that highlights the importance of the use of European domestic species introduced in the Maya area.
