Abstract: In stand mixer fitted with whisk attachment, beat heavy cream, confectioners' sugar and vanilla on medium-high until stiff peaks form, 2 to 3 min. Oil two 8-in. round cake pans and line bottoms with parchment paper; oil parchment. Assemble cake: Place 1 cake layer on cake board or cake stand.
