Abstract

Flavonoids are the important components of bioactive substances in coix seeds, uncovering component differentiation and functional orientation is also the important content in quality evolution. In this study, eight coix cultivars were used as the test materials to quantitatively detect flavonoids and their derivatives by metabonomics method, and component differentiation was analyzed. The results showed that 17 flavoniod molecules in total were detected in the eight coix materials and the metabolome profiles were similar among the cultivars with same testa color. The yellow testa cultivars contained more flavonoids in abundance and content than the red testa cultivars. The four molecules of quercetin 3-O-glucoside, rutin, eriodictyol, and luteolin, and were the main characteristic components in coix seeds, comprising a ratio of 45.35%, 32.77%, 6.04% and 5.37%, which exhibited multiple physiological activities such as antioxidation, anti-inflammatory, anti-tumor, antibacterial and viral, metabolic regulation, and neuroprotection. Formation of the characteristics of yellow and red testa in coix seeds might be related to differentiation of flavoniod accumulation, the main characteristic components in coix seeds had the effects such as antioxidation, anti-inflammatory, so they could be excavated and exploited as functional components in coix seeds.
