The article analyzes the transformations experienced by the commercial coffee circuit within the period 1851 - 1895, when we observed the beginning of its international standardization. The analysis seeks to understand the conjuncture of continuous increase in coffee prices from two different scenarios: accelerated growth of demand combined with irregular growth of its supply. For this we used data which allowed us to map out the movement of this commodity on a global scale. [ABSTRACT FROM AUTHOR]
