The perception of innovation and innovation management in a selected area of tourism, which is hotels in historic buildings, represents a key aspect in the current environment where dynamism and rapid change require constant adaptation and progress. Tourism, as an industry, is immensely influenced by social, technological, and environmental factors, which raises the need for a systematic approach to innovation and its management. The aim of the present paper is to elaborate and evaluate the impact of innovative approaches on competitiveness and sustainable development in this sector through the method of scientific abstraction. The results of the paper emphasize the need for education and education to improve the awareness and importance of innovation and its benefits for sustainable tourism development.
