Lentinan(LNT) is a kind of polysaccharide with good properties extracted from Lentinus edodes, which can improve the immunity and antioxidant capacity of the body and improve the intestinal health. In this paper, the composition and structure of lentinan, the research progress and mechanism of lentinan in aquaculture animal immunity, antioxidation and intestinal health were reviewed, in order to provide reference for the application of lentinan in aquaculture.
