Abstract

This paper draws on Oliver Williamson's new institutionalist analytical perspective on economic organizations to examine the rationality and implications of an increasingly popular business model named ghost or dark kitchens. To undertake the foregoing task, it employs an exploratory research strategy to claim that available contractual arrangements are natural manifestations of hybrid governance structures within the multifaceted universe of the platform economy. It concludes that transaction cost economics is necessary though insufficient to understand the prospects and challenges of virtual kitchens to the meal catering sector and overall restaurant industry.
