Abstract

The article focuses on the meat industry and the protection of meat by the use of sanitary packaging techniques. Discussed within the article are the processing, distribution and commercialization processes of meat products. Food Industries in Argentina are developing technologies and systems to effectively package their products. The article presents details on the use of the packaging system called "Case Ready" and gives some insight into how the system works as far as temperature control and freshness of the products.
