The hydrated title compound, C8H12O7·H2O, was isolated from the Chinese yam Dioscorea opposita Thunb. An intramolecular OH⋯O hydrogen bond occurs in the organic molecule. In the crystal structure, the molecules are linked by intermolecular OH⋯O hydrogen bonds, thereby forming chains propagating in [010]. [ABSTRACT FROM AUTHOR]
