Abstract

The article focuses on the sessions about food processing that will be presented at the 2008 IFT Food Expo in New Orleans, Louisiana. According to the author, most of the papers that will be presented at the sessions concern food ingredients and analytical techniques, including research on fat-free frying and continuous flow microwave sterilization.
