Aleks Shineleva, 22, who immigrated to New York from Moscow 11 years ago, is a manager-in-training at Gimme! Coffee, in Williamsburg, Brooklyn, which features artisanal coffees ($12-$13 a pound) valued for their molasses-incense aroma, dry pine aftertaste and farmer-friendliness.
