Abstract

When Nilsa Rodriguez was growing up in Jersey City, fast food was everywhere, she said. So when Ms. Rodriguez, 46, opened Subia's Organic Market and Cafe there in 2003 with her twin sister, Yvonne, and their brother, Eddie, 50, ''We wanted to show people who eat meat they could have healthy options,'' she said. (Subia is their mother's original name; their parents ran a bodega on the premises for many years.) Natural foods are sold in the small grocery; vegan and vegetarian dishes are served in the cafe.
