Abstract

The article presents a study on the functions and characteristics of the sub-fractions of soluble soybean polysaccharides (SSPS), the high-molecular-weight fraction (HMF) and low-molecular-weight fraction (LMF). It reveals that HMF, comprised of a large polysaccharide molecule with covalently-attached peptides, stabilizes α-casein dispersions and emulsifies oil droplets. Meanwhile, LMF which has free peptides and small sizes saccharides prevents the oxidation of emulsified lipids.
