Abstract
- The article offers suggestions from butcher couple Erika Nakamura and Amelia Posada on how to choose meat wisely. They reveal that during their wedding, they chose to use an entire rib and loin section of one steer when they entertained their guests. They recommend turning a top round or bottom round into a roast beef or braising it into a stew which Nakamura say is perfect for cold weather.
