Abstract
- In ''The Camping Cookbook,'' Annie Bell, an English food writer, (her ''Gorgeous Vegetables'' won us over), shows how to cook and serve food beyond hot dogs with no real counter space, and limited sources of heat and clean water. Pack a cutting board and a small grill. Wash produce at home. Freezing meat, poultry or bottled drinks turns your cooler into an icebox. Her recipes are simple, and each has a list of equipment. Little pitas warmed with chocolate inside, crispy duck hash with eggs, feta with honey and pistachios, and a sturdy cherry tea-loaf cake are camping keepers. She gives a fine recipe for an all-purpose marinade and a honey-mustard glaze that can double as salad dressing. But her claim to fame will surely be her method for cooking whole fish in wet newspaper on a covered grill (the paper does not burn and the skin of the fish comes away with it, making for easy filleting and serving).
