Abstract

Highlights: [•] Guar gum hydrolysate (GGH) was esterified with n-octenyl succinic anhydride (OSA) and oleic acid. [•] Gum Arabic (GA) was also modified with OSA. [•] GGH, GA, GGH–OSA, GA–OSA and GGH-oleate were used for encapsulation of mint oil. [•] The retention of mint oil was GA–OSA>GGH–OSA~GA>GGH oleate.
