Abstract

The aim of this article is justifying the use of quality management systems in the bakery industry. The work was based on quality testing of finished products (bread) from Kujawy& - Pomorze province. The paper presents the different quality assurance systems used at bakeries. Presented studies indicate an important role in assessing the quality of the product by the consumer.
