Abstract
- An essay is presented which discusses immigrant restaurateurs in New York City, New York from the mid 19th century through the early 21st century, including the taste of ethnic foods in immigrant owned restaurants and East Indian restaurant owners in the city. An overview of the names of restaurants owned by East Indians, including in regard to national identifiers placed underneath the restaurant names, is provided.
