Abstract
- The article presents the discussion on various wines on the market. Topics include reaction between riboflavin and methionine under conditions of direct exposure to sunlight; and sulfur compounds generated presenting low thresholds of olfactory perception contributing to the worsening of the aromatic profile of the wines.
