Abstract

A recent report from Sikkim University in India has examined the microbial community structures and metagenome-assembled genomes (MAGs) of sieng, an ethnic fermented soybean food of Cambodia. The study found that Bacillus subtilis was the most abundant species in sieng, followed by other bacterial species. The research also identified several KEGG pathways and CRISPR-Cas proteins in sieng. Comparative analysis with similar fermented soybean foods from other Asian countries showed distinct differences in the microbial composition of sieng. This study provides the first report on the microbial community structure and MAGs of sieng. [Extracted from the article]
