Abstract

A recent study conducted in Punjab, Pakistan compared the nutritional properties, phytochemical profile, and antioxidant activities of red and green water chestnut fruits. The study found that the green variety had higher protein, fat, dietary fiber, moisture, ash, and energy content compared to the red variety. Additionally, the green variety had higher levels of minerals and vitamins, including vitamin C, B6, A, and b-Carotene. The methanolic extract of the green water chestnut fruit also exhibited higher antioxidant activity compared to the red variety. The study suggests that the green water chestnut fruit could be used as a source of natural antioxidants in nutraceuticals. [Extracted from the article]
