The article discusses the challenge of creating alcohol alternatives that mimic the sensory experiences of traditional cocktails. The growing trend of mindful drinking has led to an increase in the demand for nonalcoholic beverages that still provide the social and emotional experiences associated with drinking. To achieve this, the flavor industry needs to develop complete solutions that not only include flavor but also mouthfeel enhancers.
