Abstract

Sumac, a tart and vibrant red spice, is native to the South and grows wild in the region. It has been used in Indigenous traditions, including the creation of sumac lemonade. The spice is made from dried and ground berries, which are harvested in late summer to fall. Sumac can be used in a variety of dishes, including savory chicken, drinks, and desserts. However, it is important to purchase sumac from a spice store, as certain types with white or gray berries are considered poisonous.
