Abstract
- Researchers at Kasetsart University in Thailand have conducted a study on the environmental performance of a ready-to-eat product called 'Riceberry + KU', which is a mix of riceberry rice and kidney red beans. The study found that this product had a lower carbon footprint and higher nutritional value compared to white rice. The research suggests that providing information on nutrient quality can help consumers make more sustainable food choices. This study has been peer-reviewed and offers valuable insights into the nutrition-environment nexus assessment for supporting environmental product declarations in the food industry.
