Abstract

A recent study conducted by the Institute of Chemical Technology in Mumbai, India, focused on formulating synbiotic buttermilk powder with higher viability of probiotic cells using trehalose, whey protein concentrate, pullulan, and calcium lactate gluconate. The research found that the formulation containing TRE4 + CAL0.5 showed the best results in terms of probiotic cell viability and physicochemical properties during storage for 16 weeks at 4 (+-) 1 °C. The addition of protectants and Fructooligosaccharide as a prebiotic did not affect the powder properties, and the SEM results showed spherical shapes without cracks for the synbiotic buttermilk powder.
