Abstract
- Researchers at the University of El Oued conducted a study on the dynamics of nutritional compounds and antioxidant activity during the development and maturity stages of date palm fruit. The study focused on two date palm cultivars, Deglet Nour and Degla Beida, and analyzed various components such as water content, dry matter, secondary metabolites, and antioxidant activity. The findings revealed dynamic patterns in the nutritional components and antioxidant activity, with differences observed between the two cultivars.
