Abstract

An essay is presented that discusses the history of taste in the United States. It describes how the sensory experience of people living in the past helps to understand the social and cultural context of the periods in question. Subjects under discussion include the relationship of food to industrialization, the relationship between cuisine and national identity, and the relation between consumption practices and personal identity.
