Abstract

The article discusses the use of foraging to provide ingredients for high-end restaurants. According to the author foraging has become the latest culinary obsession with foraging entrepreneurs selling their foraged goods to restaurants and chefs all over the world. Foraging can take place in rural or urban settings and foragers often command a high price for hard-to-find and unique ingredients.
