Abstract

A recent study conducted by researchers at Shandong University in China explores the potential of a marine bacterial metalloprotease A69 in the preparation of peanut peptides with angiotensin-converting enzyme (ACE)-inhibitory and antioxidant properties. The researchers optimized the hydrolysis parameters of the protease A69 to prepare peanut peptides with high antioxidant activity and ACE-inhibitory activity. The prepared peptides exhibited a high content of peptides with molecular weights lower than 1000 Da and 3000 Da, and contained 17 different amino acids. The study concludes that the prepared peptides have good nutritional value, as well as antioxidant and antihypertensive effects, and that the marine bacterial metalloprotease A69 shows promise in the preparation of bioactive peptides from peanut protein.
