Abstract
- A study conducted at Shanghai Ocean University in China examined the impact of modified atmosphere packaging (MAP) with different gas mixtures on the texture and muscle properties of Pacific white shrimp during refrigerated storage. The research found that MAP with a gas composition of 80% CO2 + 5% O2 + 15% N2 had the lowest microbial counts and reduced total volatile basic nitrogen (TVB-N) values. However, the study also noted that MAP had a complex effect on muscle protein and texture, with certain gas compositions maintaining springiness and protein content better than others. The researchers concluded that the concentration of CO2 in MAP for Pacific white shrimp should not exceed 60% for optimal texture and protein properties. [Extracted from the article]
