Abstract
- The article explores gene expression profiles and chemical profiles to comprehend what takes place in tea leaves during the manufacturing process of Oriental Beauty, a Formoso oolong tea that has an aroma like ripe fruit and honey. The gene expression profiles during manufacture were analyzed by differential screening between fresh leaves and tea leaves of the first turn over. The endogenous contents of abscisic acid and raffinose increased during manufacture.
