Abstract
- The article discusses the study on structure-dependent photodegradation of carotenoids. The study aims to identify the pigments that are favorable to accelerated degradation due to sulfides under ultraviolet-a (UVA) irradiation. Crocetin and crocin decompose more rapidly with dimethyl tetrasulfide than cyanidin, while kuromanin and keracyanin were not affected. The results suggest that conjugated double bonds are favorable to accelerated photodegradation by sulfide as mediated by free radicals.
