Abstract

The article presents a study which investigates the effects of yeast strains on red wine quality. The study was carried out by researchers from the Institut Français de La Vigne et du Vin (IFV) in France, focusing on colour compounds and aroma molecules in Shiraz and Merlot. Details on how the study was conducted as well as the result are highlighted.
