Relation of genotype and maturity phase in determination of strawberry fruit quality

Abstract
- Three different strawberry cultivars Marmolada, Arosa and Raurica were harvested in different maturity stages (100, 85 and 70 % of red colour covered fruits). The aim of study was to investigate changes of internal and external quality parameters in relation to genotype and maturity stage. At these samples are done objective measurements of their quality: total soluble solids (TSS), and titratable acidity (TA), and fruit colour (CieLAB). Fruits of less coloured phase had higher percentage of TA. The proportion value TSS/TA was increased according to maturity stage. The lowest TSS/TA ratio had cultivar Arosa. The cultivar Raurica had higher L, a, b and C in comparison to others cultivars. Colour values L, a and C were also higher if fruits were harvested in phase 70 % of red colour. Our results confirm that genotype and maturity phases are important factors in determining of strawberry fruit quality.
