Abstract

This paper describes the effects of high hydrostatic pressure treatment on the structure and activities of rabbit skeletal muscle proteasome. It was cleared that the high pressure treatment up to 50∼100 MPa caused the activation of the proteasome as observed in the mild denaturing treatment with SDS, heat etc. This activation is probably due to the increase of the interaction of the substrate and active site of the proteasome unfolded by high pressure treatment.
