Abstract
- Fresh-cut mushrooms can be stored for a limited time, but must be cooled quickly and be provided with an air gas composition with high relative humidity to maintain quality. For that reason, it is common to pack fresh-cut mushrooms in trays sealed with macroperforated film that allows water vapor exchange stored at low temperature (1–3°C). Since macroperforated films do not sustain modified O2 levels, they reduce the risk of Botulinum toxin production. An atmosphere of 3% O2 plus 10% CO2 can also maintain quality of fresh-cut mushroom slices when stored at 5°C. Storage with more than 20% CO2 accelerates tissue darkening, and
