Abstract

The acceptability and storage stability of a cheese-flavored spread from peanuts were determined. Consumer test involving 416 respondents were conducted at six central locations in the Philippines. The spread was most acceptable to plder respondents in general and least acceptable to those under 20 years of age. Also, respondents earning more than P 24 000 found the spread least acceptable. Consumers were willing to pay a higher price for the cheese-flavoured spread than for peanut butter but lower than that for a dairy-based spread. Results indicate that the color and flavor of the cheese-flavored spread did not significantly change after storage at 30° C for 60 days.
