Sensory and Molecular Characterization of the Aroma Profiles of Fish Oil Supplements

Abstract

Three commercially available encapsulated supplementation products of fish origin, for optimal sustenance according to n-3 polyunsaturated fatty acids during pregnancy and lactation time, were evaluated by means of sensory characterization and quantification of odor-active marker compounds. Focused on sensory evaluation, the differences within aroma profile analyses showed up correlations with the hedonic rating. Moreover, the overall amount of aroma markers, measured by stable isotope dilution assays, refers to statistical differences within the products, in conformity with sensory differences and preferences.
