The Epigenetics of Flavors

El origen de los sabores y el desarrollo del sentido del gusto es un tema relativamente poco explorado al estudiar temas nutricionales, de crecimiento y desarrollo infantil y de seguridad-inseguridad alimentaria. Más aún, pasa inadvertido cuando las necesidades urgentes de una población implican satisfacer el consumo de alimentos para lograr la adecuación calórica y asegurar la sobrevivencia en medio de una crisis. El presente artículo explora las hipótesis sobre el desarrollo del gusto y de las preferencias por los sabores y su relación con las marcas epigenéticas generadas por el ambiente, particularmente por el entorno alimentario en el cual se encuentran los individuos al inicio de la vida. The origin of flavors and the development of the sense of taste is a relatively unexplored topic when studying nutritional issues, child growth and development, and food security-insecurity. Furthermore, it goes unnoticed when the urgent needs of a population imply satisfying food consumption to achieve caloric adequacy and ensure survival in the midst of a crisis.
