Abstract

Research shows that nonadapted Propionibacterium freudenreichii cells undergo dramatic morphological changes, intracellular leakage upon bile salts challenge. Additionally, at least 24 proteins are induced during adaptation and proteomic analysis sugests that the bile salts stress response involves signal sensing and transduction. Pretreatment with bile salts confers tolerance to subsequent challenge.
